I enjoy making plant-based versions of classic recipes without losing the character of the original dish.
Over the years, I’ve experimented with recipes that seem more challenging, but often they don’t need obscure ingredients or complicated processes.
The recipes here are everyday dishes, well within the skill set of most home cooks.
A vegan tortilla, vegan strawberry ice cream or vegan clotted cream might sound daunting, but trust me — they’re not!
Being vegan does not mean you have to compromise on flavour. Introducing ingredients such as miso and yeast can give a depth of flavour.
All of these veganised recipes are tried and tested by me, with step-by-step instructions to follow.

Veganising classic dishes
Modern plant-based cooking makes it possible to recreate nostalgic flavours in fully vegan form — delivering the same comfort and authenticity without compromise.
I experiment with newer techniques, like using aquafaba for lightness and chickpea flour or silken tofu to recreate egg-like textures, alongside ingredients such as miso and nutritional yeast for added depth of flavour.
Older vegan versions of classic recipes often relied on simply removing ingredients or making basic substitutions. Some recipes still use commercial alternatives, such as plant-based mince in a vegan shepherd’s pie.
I’ve developed all these recipes from scratch — often refining them many times — to create well-rounded and satisfying results.
